    My go to brownie recipe

    Every chocolate lover loves a good brownie. And here is another one. I started to bake brownies as a little girl with a preboxed brownie mix. And I specially loved to lick the bowl after my mother poured the mixture in the baking tin. Of course she left a little bit more in the bowl so I could enjoy a little bit extra!

    This brownie is my go to recipe, I’ve made it so many times and this is the version I stick to every time. And with succes! I’ve feed this brownie to every chocolate lover I know and they love it. They even gave me some comments when I got my new oven because it was just a little less gooey-er then usually..

    Servings 40 pieces


    • Baking tin
    • Sauce pan
    • Mixing bowl
    • Whisk


    • 350 gram Butter
    • 350 gram Dark Chocolate at least 55%
    • 6 Eggs
    • 1 tbsp Vanilla Extract
    • 400 gram Sugar
    • 225 gram Flour
    • 1 pinch Salt


    • Preheat the oven at 180 degrees celsius
    • Prep a big baking tin (approxamatly 30x20cm)
    • In a sauce pan, melt the butter and the chocolate on low fire. Set aside when everything is blended and let it chill
    • In a big mixing bowl, mix the sugar, eggs and vanilla extract. When the chocolate-butter mixture is chilled you can add it to the egg-sugar mixture and whisk it all together
    • Last you'll add the flour and a pinch of salt, and again mix well.
    • This is the part where you can spice up your brownie. Add some nuts, chunks of chocolate, coconut, you name it.
    • If you're happy with the brownie (stuffed or not) you'll pour it in your prepped baking tin and bake it for +-45 minutes. Check reguraly after 30 minutes since every baking tin and every oven is different. You want the brownie to be set on the outside but nice and gooey on the inside.

    The best pizza from scratch

    Ever since we have our new kitchen, we have a way bigger oven. And one thing I always loved to make when I still lived at my parents, was a pizza from scratch. Most of the time I used pre-made pizza dough, but ever since I found out my belly gets upset from plain wheat, I make a lot of things from scratch. Because they are very overpriced at the store or not even available. So, since we are able to eat pizza from scratch, also the pizza dough is made from scratch. Where lots of people think it is a big chore it is actually pretty easy and very good adjustable for every kind of allergy.

    I must admit, it did take me some tries till I got the hang of it. At first, I used whole grain spelt flour. That wasn’t a success for taste, it was too grainy. So then came the plain spelt flour, but I rolled it out to thick. Ok, next time a bit thinner. You can guess it right? To thin… It was a mess! I think I’ve got every failure now, so fourth time is a charm? And there it was, a perfect tasting with a perfect thickness pizza.

    When we top the pizza, I usually go for all kind of cheeses. I am a cheese lover and most often when I’m in a restaurant I’ll order the four-cheese pizza too. But the best part is that you can top the pizza with whatever you like. You can go all classic with a Margherita or Quattro Stagioni. But you can also experiment with a Mexican touch with corn, beans and sour cream on top. Anyway, I love to share my go to pizza from scratch recipe with you and hope you’ll enjoy it just as much as we do!


    Pizza from scratch

    Cook Time 20 minutes
    Servings 2 Pizza’s



    • 300 gram Flour
    • 7 gram Yeast
    • Pinch Salt
    • 2 tablespoons Olive Oil
    • 160 mililiter Handwarm Water


    • 150 mililiter Tomato sauce
    • 2 teaspoons Italian Herbs
    • 100 gram Cheese
    • Any topping you like


    Making the dough

    • Mix all the ingredients for the dough in a bowl until it is a nice and smooth dough. It should be a bit elastic now.
    • Grease a bowl with oil and put the dough in it. Cover with a clean towel and let it rest for 45 minutes till the dough is doubled in size.
    • Preheat the oven on 200 degrees Celsius.
    • When the dough is done you separate it in 2 parts and roll it in it's form. You can make it classic round or the shape of the sheet you'll be using. You can try out a bit of a thicker dough if you like that.
    • Now bake only the dough in the oven for about 5-10 minutes. Depending on how thick your dough is.

    Top your pizza

    • Get the pizza out and cover it with tomato sauce, Italian herbs and cheese.
    • Add any other toppings you like. Use a different kind of cheeses or try out some vegetables. Put it back in the oven for 10-15 minutes and enjoy your homemade pizza!

    Baking an easy apple cake

    I love to bake my own cakes for every occasion I can think off. Especially when it is somebody’s birthday! And people know that… I remember one time I bought a cake for my birthday, and everyone was disappointed that I haven’t baked it myself. Even I was disappointed! So, lesson learned: I’ll always bake my own cakes. 

    But I totally get it, because we all know how easy it is to buy a cake or a box of cake mix. But let’s be honest, homemade from scratch is so much better. And above all the flavor and freshness are so worth it. If you have never baked a cake from scratch, you will be surprised at how simple it is. Most of the time you even have all the ingredients on hand!

    But I’m not only baking when it is someone’s birthday, I love to bake just to relax. And after this week I needed it. This week was mostly filled with lots of work, deadlines here, last minute requests there and the house was not getting more organized by it. That’s the reason why the weekends are so important for me. My moment to fully reload. This weekend was a very nice one. It was typically Dutch autumn weather (officially it isn’t autumn yet..) and I was craving some comfort food while it was raining outside. One thing I always like is homemade apple cake. Only the smell off the warm apples with cinnamon will give you a comforting warm feeling. It is also a delicious, easy and perfect cake to share with family and friends.

    Easy apple cake

    Cook Time 1 hour
    Total Time 1 hour 30 minutes
    Servings 12 slices


    • Oven
    • Cake pan
    • Aluminum foil
    • Spatula
    • Mixer (electric or by hand)


    • 100 gram Flour
    • 75 gram Granulated sugar
    • 25 gram Vanilla suger
    • 100 gram Butter
    • 2 Eggs
    • 2 Apples
    • 1 Teaspoon Cinnamon Optional


    • Gather all the ingredients and let it come to room temperature.
    • Heat the oven to 170 degrees Celsius.
    • Prep you cake pan with butter and flour.
    • Peel the apples and cut them in small cubes.
    • Put the butter, sugar and vanilla sugar in a bowl and mix until smooth.
    • Add the egss one by one while mixing.
    • Add the flour and mix until the mixture is nice and fluffy.
    • When the mixture is fluffy add the apples and mix well using a spatula.
    • Pour everything in your prepped cake pan and cover with some aluminum foil. Bake the cake with the foil for 40 minutes. After 40 minutes, remove the foil and bake for another 20 minutes.
    • Cool the cake on a wire rack for 10 minutes, then loosen the edges by running a knife along the sides of the pan.
    • Turn the cake and let it cool for 60 minutes. Or let it cool for 15 minutes so it will still be a bit warm. (Remember this for the cold and rainy days for some instant comfort!)
